Ginger-Garlic Salmon Packets with Citrus

As part of the Market to Kitchen chef series, Ryan Kate presented this Chef Demo in conjunction with Food Day for Kids, 10/17/15.

4 salmon fillets (6 oz.)
1 T fresh gingerroot, minced
1 T fresh cilantro, minced
2 garlic cloves, minced
2 t each of lemon, orange and lime zest
2 T rice vinegar
2 T soy sauce

Place each salmon fillet on a double thickness of heavy duty foil (about 12 in. square).

Combine ginger, cilantro, garlic and zest. Spoon over salmon.

In a small bowl, combine vinegar, soy sauce and pepper. Drizzle over salmon.

Fold foil around fish and seal tightly leaving room for steam in the packet.

Grill covered over medium heat for 15-20 minutes or until fish flakes easily with a fork. Can also be baked in the oven at 450°.
