This family farm near Wills Point is run by Pat Gaines, her son and daughter-in-law, Jay and Laurie Waligora. Using sustainable methods, they grow gourmet salad greens, none of which are lettuce. Three screened-in greenhouses allow them to maintain a more constant temperature, keep the bugs out and facilitate organic growing practices. They also make other products like fresh pesto, spreads, the real deal sauerkraut, and various homemade dishes. Their free range chickens produce eggs for the market as well. Sustainably Grown.
