Cheesy Baked Eggplant from Pinch of Yum

What you’ll need from the Coppell Farmers Market:1 large eggplant 1 carton of eggs 1 ball of Jersey Girl Dairy’s mozzarella cheese toppings: fresh arugula or greens, sweet pepper, sausage, bacon, olives, etc.

Farmer Update: Late-Season Yields

We’ve been lucky to have a good selection of growers at the Coppell Farmers Market through the month of September due to the cooler temperatures and rain.  This October (as noted in the Dallas Morning News) a handful of growers have exhausted their late summer crops and await their first fall/winter harvest.

New Farm Alert!

Tree Folk Farm joined the Coppell Farmers Market in early September. The farm specializes in mushroom production and grows vegetables, too, on their 1.3 acre property in Denton, TX.
