Bacon Wrapped Jalapenos

Halve jalapenos lengthwise.  Remove seeds and membrane, if desired.  Stuff with goat cheese.  Wrap pepper with ½ piece of bacon and secure with a toothpick.  Bake in 350 degree oven until bacon is just crisp.  Optionally add toasted, chopped pecans to the cheese before stuffing.

Okra Patties

1/3 cup white flour

2/3 cup cornmeal

1 tsp baking powder

2-3 tsp Cajun seasoning e.g. Emeril’s Essence

½ tsp salt

1 egg

½ cup milk

1 lb. of okra, chopped

½ cup onion, diced

 

Oil for frying

Additional salt

Combine flour, cornmeal, baking powder, seasoning, and salt in a small bowl and mix thoroughly.  Make a well in center and add the egg and milk.  Whisk together to form the batter. Fold in okra and onion to combine.

Heat skillet and add vegetable oil (Canola).  Spoon in batter and flatten slightly.  Fry in batches, until crispy on both sides. Salt to taste.

Makes about 18-20 2 inch patties.
