Egg and Spinach Brunch Recipe

Brunch is by far our favorite meal. We go out for brunch almost every weekend to our usual spots.

I mean what’s not to love about brunch…like my little one says, “it’s pretty awesome –it’s breakfast and lunch.” Of course for her it means one less meal to eat her veggies and listen to Mom’s rant about nutrition and health 🙂 It’s a perfect way to unwind on the weekend or catch up with friends in your casual attire.

When we don’t have patio weather (which is rare in Texas and we super dislike it) I try to whip up one of my favorite very easy brunch items. Ingredients for the recipe come from the farmers market because my weekends are incomplete without a trip to the market.

5 slices of bread (I have used both whole wheat and onion garlic)

1 cup fresh chopped spinach

1 cup salsa

5 eggs (beaten)

1 cup shredded cheddar cheese or any cheese of your choice.

Salt and pepper to taste.

Heat the oven at 400 degrees, tear apart the bread slices and lay them out in an oven proof dish. I use parchment paper and skip on oiling the bottom of the dish and its super easy to clean as well.

Put a layer of chopped spinach over it, followed by salsa and then pour the egg mixture. Sprinkle the cheese and bake for 18 minutes uncovered. I have learnt over time that 400 degrees temperature and short baking time makes for a perfect crispy outside and soft yet fully cooked inside. The cheese is perfect texture and spinach will have great flavor.

We are hosting a neighborhood brunch this Sunday and who knows maybe I’ll whip this up for ten of us (will up the amount) because I believe “food is essential for life, therefore make it good.” (S. Truett Cathy)

I used happy eggs from Greens and Goodies. Their most delicious bread will turn any dish into gourmet and don’t even get me started on the salsa from Two Chefs. I can probably write a whole article on that most flavorful salsa of all time. So don’t wait too long for Sunday brunch because “A Sunday well spent brings a week of content.” (Proverb)
