Fixed this way, eggplant is delicious finger food. Even people who profess not to like eggplant scarf this up! Definitely cut up more eggplant than indicated – it’ll go fast!
1 lb. eggplant (you can fit up to 2 lbs. eggplant per baking sheet if you want to double the recipe)
2 tbsp extra virgin olive oil
Salt
Optional ingredients: black pepper, your favorite seasonings
